Homemade Raffaello cake with cottage cheese - a step by step recipe with a photo.
The most delicious Raffaello cake turns out surprisingly soft and very tasty. Cake layers according to this recipe are prepared quite simply and from ordinary products. But, when they are soaked and seeped with a delicious cream, the taste is simply unforgettable. I’ll tell you a secret: such an amazing effect is obtained from the combination of margarine and cottage cheese, which together make up the cakes. If you want to master and cook this soft cake at home, I hope my step-by-step recipe with a photo will help you with this.
To knead and bake cakes you need:
three eggs,
100-150 g margarine,
one and a half cups of sugar
300 g cottage cheese,
3 cups flour
1.5 teaspoons of soda.
How to make a Raffaello cake
Let's start cooking by whisking the eggs and sugar at the same time until smooth.
In another bowl, grind margarine with flour, add cottage cheese with pre-added soda. Sour cottage cheese is also suitable for the test, the soda in it will be well extinguished.
Combine and mix both ingredients. You can add salt if the margarine is unsalted. We get a thick dough. If it turns out to be watery, add more flour.
We roll 4 buns out of it and set aside in a cold place for 1 hour.
From the dough for my rectangular sheet (which sheet I have can be seen in the photo below), we roll out 4 cakes 0.5-1 cm in thickness. The dough is tender and breaks easily when rolled out, but this is not a reason to be upset. The finished cake will still turn out beautiful and very tasty. Over time, I got used to it and came up with a little trick: I roll the dough in small layers, and in the form I just put it together with my hands.
I send the cakes to the oven and bake at medium heat until golden brown.
Now we make cream for Raffaello
This is, in fact, custard , for the preparation of which we need:
2 eggs,
one and a half tablespoons of flour,
400-500 ml of milk,
1 cup of sugar,
a pinch of salt
200 g butter,
vanilla.
Beat eggs with sugar until doubled in size, then add flour. Mix until the lumps are gone.
Pour in milk, add a pinch of salt and vanilla and mix again.
Pour the mixture into a stainless steel saucepan and cook over low heat, stirring, until it thickens.
In the still warm cream, dissolve the butter and knead well. Cream for the cake should turn out as in the photo.
And the last step is to assemble the cake. We thickly spread the cream on the cakes (and the top one too !!!), sprinkle the top with cookie crumbs and / or chopped nuts.
We let it soak for 3-5 hours and you can try the cake. But here, nevertheless, remember that it will be very tasty and, most importantly, as soft as possible after 12 hours. This is how long a soft cake requires for optimal impregnation.
