Jelly cake with fruits on a delicate shortbread and cookies - recipe with photo
Delicious fruit jelly cake is a delicious dessert on a delicate shortbread crust. In addition to the cake, I also make fragrant homemade cookies from the excess shortcrust pastry. Shortcrust pastry for the base cake is very easy to make, and fruits filled with jelly make it exquisitely beautiful, but most importantly, it is very tasty. For a fun company, especially for children or women, this will be the perfect dessert.
Shortbread Ingredients:
100 gr margarine;
1 st. a spoonful of sour cream;
1 egg;
100 grams of sugar;
a pinch of vanilla;
350 gr flour;
1/2 teaspoon of soda.
For the fruit jelly filling:
banana;
kiwi;
mandarin;
currant;
30 g of gelatin;
500 ml juice / compote.
How to make fruit jelly cake
Bring margarine to room temperature. Grind with sour cream, egg, sugar and vanilla with a mixer (you can use a fork).
Add soda to flour, gradually stir in the rest of the ingredients.
The dough is sticky and does not like to be kneaded for a long time. It is easier to mix flour with a kind of forcing fingers. The more flour you mix in, the better the dough will hold its shape, it will not float. But in turn it becomes harder. For our jelly cake, 350 g of flour is enough. The dough will shrink a little during baking and leave room for jelly.
Wrap the dough in cling film and refrigerate for 20 minutes.
How to make jelly for a cake
If you use regular gelatin, then the dosage that is written on the instructions on the package should be increased. For 500 ml of juice we take not 20, but 30 grams of gelatin. Bring the juice to a boil, set aside, dilute the gelatin. It is better to strain the solution, eliminating undissolved particles of gelatin.
If you use a special “cake jelly”, follow the instructions on the package strictly and cook it later, when the cake is already in the oven.
Next, we go back to the test. We take it out, roll it out, lay it on the form. For baking the cake, I use a regular cake pan.
With our hands we press into all the recesses of the form, cut off the excess.
From the "surplus" we form cookies of arbitrary shape. I grease with delicious jam and fold it into an envelope. How it looks can be seen in the photo.
The shortbread cake is baked quickly - 15 minutes at 200 C. We take it out and cool it. When the cake has cooled, put it back into the mold.
In the meantime, we cut the fruit, cover the pie with them, pour in the cooled jelly, which should already be at a light stage of thickening. Any fruit is combined with jelly, we choose them according to our wishes.
We send a beautiful and tasty cake with jelly and fruits to the cold after complete solidification. When completely dry, sprinkle with powdered sugar.
