Homemade biscuit roll “Mushroom meadow” with chocolate butter cream with condensed milk
Today I want to offer my version of the Mushroom Glade biscuit roll, which can be quickly and easily prepared at home. It will be a wonderful sweet decoration for your holiday or a pleasant sweet snack on weekdays. Its preparation takes no more than two hours and does not require special pastry skills from you. It is best to serve the roll with a hot and fragrant cup of tea or coffee. My simple and proven over the years recipe with step-by-step photos taken at your service.
Ingredients:
Biscuit:
- Large eggs - 4 pieces,
- Granulated sugar - 180 grams,
- Premium wheat flour - 200 grams,
- Dark chocolate - 50 grams.
Cream:
- Butter 82% - 300 grams,
- Condensed milk 8.5% - 1 can,
- Dark chocolate - 50 grams,
- Green food coloring (fat-soluble) - 1-2 drops,
- Powdered sugar and cocoa - ¼ tsp each,
- Cookies "Medallions" for mushroom hats - 5 pieces.

How to make biscuit dough for roll
First, let the chocolate melt.
Without separating the whites and yolks from each other, beat the eggs at medium speed, gradually pour in the sugar. When all the sugar is poured, increase the speed and continue to beat the eggs until the sugar is completely dissolved.
Sift the flour directly into the eggs and mix the dough with a spatula.
Then, add the melted chocolate, mix it with a small movement, but not completely. Part of the dough remains light and part brown.
We spread it on parchment, greased with butter, and bake it (t \u003d 170 °? 15-20΄).
How to roll a biscuit roll
We take out the biscuit, cover it with a dry napkin / towel, turn it over, remove the parchment paper and immediately roll it into a roll (this must be done while it is hot). The towel should be inside the wrapped roll.
We cool it in such a twisted form.
How to make butter chocolate cream with condensed milk
Mix condensed milk (room temperature) with a mixer with softened butter at medium speed. Beat the cream until the butter is combined with milk. The cream is homogeneous, smooth and shiny.
Set aside 4 tablespoons of cream in a separate bowl.
In the remaining cream, add melted, but not hot chocolate. Mix it with the cream with a spatula. If you accidentally beat the cream, continue beating in a water bath. The cream will gradually acquire a smooth texture, but will lose some of its splendor.
How to make a biscuit roll
We unfold the cooled biscuit and coat it with cream. Roll back and apply cream on top. Using a wide fork, draw wavy lines to give the roll the shape of a tree bark.
We mix the reserved cream with green food coloring, fill a pastry bag with a nozzle, which we will use to make leaves. In the second bag we place the chocolate cream with the usual wide round nozzle.
First, we plant the legs of the mushrooms, and then we make green leaves. At the very end we put hats (cookies). We remove the roll in the cold for complete solidification.
Before serving the roll, mix the powdered sugar and cocoa together. With the help of a fine sieve, we powder our mushroom clearing. It, too, should get a little on the dish, for decoration.
