Homemade blueberry cream ice cream on a chocolate saucer with violets
Today I made a very delicious homemade blueberry cream ice cream, and served it on the table on a chocolate saucer with violets. Both creamy ice cream and chocolate plates can be easily and simply made at home with your own hands. With this wonderful creamy dessert, you can complete a beautiful festive feast. It is recommended to serve it with crispy biscuits and a fragrant cup of tea or coffee. My detailed recipe with step-by-step photos taken will be a good helper for you in cooking.
Ingredients:
- 6 chocolate plates;
- violets for decoration;
- violet sugar for decoration.
For ice cream:
- 100 grams of fresh or frozen blueberries;
- 1 vanilla pod;
- 100 grams of powdered sugar;
- 90 grams of white sugar;
- 2 yolks;
- 1 liter cream 33%;
- 1 teaspoon violet sugar (optional)
How to make Blueberry Cream Ice Cream
The first thing to do is prepare the berry component. Pour the blueberries into a saucepan, press it down a little (you don’t need to press the frozen one, just defrost it), pour it with 30 grams of sugar and heat it until the sugar is completely melted. Using a wooden spoon, grind the blueberry mass through a colander.
Pour the remaining 60 grams of sugar + 1 teaspoon of violet sugar into the bowl for the mixer, add the yolks and beat at high speed until the mass becomes smooth in texture and almost white in color.
We introduce the yolk mixture into the blueberry mass, mix and send to a water bath.
We cut the vanilla pod along the entire length, remove the seeds with the tip of a knife and send them to the blueberry mass. We will bring the whole mixture to a thickening for about 20 minutes. It should remind us of the consistency of thick sour cream. We remove from the bath and cool.
We take out the cream from the refrigerator (!) They should be well chilled. Pour them into a bowl with high sides. We begin to whip the cream, first at medium speed, and then increase it. When the cream has grown in half, without ceasing to beat, pour in the powdered sugar. The finished cream should double in size and hold its shape well.
Add a few (4-5) tablespoons of whipped cream to the chilled blueberry mixture and mix with a spatula.
Then, all this mass is introduced into the cream. Do this mixing with a spatula by folding. We hold a spatula with our right hand, and a bowl of ice cream with our left hand. With a spatula, scoop up the whole mass from the very bottom, and with the left hand rotate the bowl counterclockwise. Continue this mixing until the whole mass becomes homogeneous.
We put the ice cream in the freezer. After 40 minutes, mix it with a whisk. So we repeat this procedure 5 times.
While the creamy ice cream hardens, there is time to prepare the molds. We spread the confectionery rings with food paper from the inside and place them on a saucer with food paper. We place almost frozen blueberry ice cream inside and put it in the freezer. It is not necessary to bring it to a complete freeze, it is enough that it keeps its shape well.
Arrange chocolate saucers .
We take out the ice cream from the cream from the freezer, remove the ring and remove the paper. We place homemade ice cream in the center of the chocolate saucer. We decorate it with violet sugar and a violet flower.
If pastry rings are not available, then you can make them from plastic bottles or just freeze ice cream in the same bowl in which ice cream was made. When serving, make a ball with a hot spoon. In the photo below, three plates are made in this way.
