Homemade honey cake with sour cream - a delicious and simple classic cake recipe
With this recipe, you can make a delicate honey cake with shortbread cakes, radiating a light spicy honey aroma, layered with sweet and sour sour cream. The proposed cake recipe is a family one and we have been baking it for a long time. In my grandmother's recipe book, it is listed as a classic. Preparing a honey cake is very simple and advantageous in relation to other recipes in that the cakes are baked very quickly - no longer than 6 minutes. This makes honey cake easy and enjoyable to make at home.
How to make honey cake
Let's start cooking with sand cakes. To do this, mix 100 grams of softened butter with 150 grams of sugar and 2 tbsp. spoons of honey, beat with a mixer. If the honey is thick, you can warm it up a little on the stove. It is not necessary to boil, honey will quickly become liquid in a water bath.
Next, you need to add two eggs to this mixture and continue beating. You do not need to beat for a long time, you just need to achieve a homogeneous mass.
Add approximately 420 g of flour, 1 teaspoon of baking powder and knead the plastic dough. At this stage of kneading, you need to do it with your hands. The dough is ready when it stops sticking to your hands. If it doesn't, add flour.
Next, divide the honey shortbread dough into equal 6 parts. We roll each thinly, but so that it can be transferred to a baking sheet. We try to make the cakes of the same shape so that they can then be folded into one symmetrical cake. But, if any parts are not even - do not get upset. Then we trim the finished cake with a knife and use the cut parts to decorate the honey cake.
After rolling out the cake, you need to grease a baking sheet with butter, put the rolled cake on it, put it in an oven preheated to 200 degrees for 6 minutes. During this time, the cakes should become a beautiful golden color. When baked, they increase slightly in size and may change shape. When all the cakes are ready, cut off the protruding ugly sandy edges and set them aside.
How to make sour cream cake
We take 2 cups of sour cream (500 gr) and 1 cup of sugar, beat with a mixer until the latter is dissolved. For flavor, you can add 2 teaspoons of vanilla sugar.
If you want to make a sour cream, sour cream can be taken with low fat content. The fatter the sour cream, the softer and thicker it is. If the sour cream is thick, it will be worse absorbed into the cakes. In this case, it is better to additionally lubricate them with any liquid syrup, then the homemade cake turned out to be less dry and more tender.
Lubricate all layers with sour cream, including the top. Roll out the remaining scraps from the cakes with a rolling pin to a crumb state. They need to be sprinkled on top of the top cake, which will serve as a decoration for our delicious homemade cake. If such a decoration seems insufficient, then you can additionally prepare your favorite butter cream and decorate with patterns on top of the crumbs. In addition to or instead of this, you can draw abstract patterns from chocolate icing crumb by crumb.
