If you want to surprise your loved ones, bake an unusual cake called “Drunken Cherry”. Seemingly rather complicated at first glance, its recipe is actually very simple. The two main conditions for a home-baked cake to turn out are to bake a magnificent biscuit and let the product soak for at least a day. A step-by-step recipe with a photo, I hope, will help you easily and simply master the process of baking and preparing “Drunken Cherry”.
How to make a cake
Pour 2 cups of pitted cherries with 125 milliliters of good alcohol (vodka, cognac or whiskey). Leave the cherry to infuse for 24 hours. Strain it off the alcohol the next day when you are about to bake a biscuit. Do not pour out the resulting liquid and do not drink. 😉
Mix 130 grams of flour, 4 full tablespoons of cocoa powder and 1 teaspoon of baking powder for dough. All together several times sift through a sieve.
Take 6 eggs and separate the yolks from the whites.
Beat the yolks with sugar until fluffy light mass. Take 105 grams of sugar.
Separately, beat egg whites to peaks. Sugar take the same 105 grams.
Add 1/3 of the whipped whites to the beaten yolks - mix the mass with a silicone spatula. Pour flour with cocoa and baking powder into the resulting mass - mix again.
Using a top-down motion of the spatula, fold in the remaining beaten egg whites.
Put the dough into a detachable form with a diameter of 21 cm. Bake a chocolate biscuit for about an hour at a temperature of 190 degrees. Check readiness with a long wooden skewer.
Remove the cake from the mold and let it cool completely.
Make cream from one can of condensed milk and 300 grams of softened butter. Set aside ¼ of the cream in a bowl.
Cut off the top of the biscuit - you should get a kind of lid. Take out the whole crumb from the rest - you will get a biscuit hollow shape.
Break the biscuit crumb into small pieces and mix it with most of the cream and alcoholized cherries.
Soak the hollow biscuit form with the liquid that remains after soaking the cherries. Then smear the mold with the cream that you put aside in the bowl.
Fill the mold with cream, biscuit and cherry filling. Place the cut lid on top of the filling.
Pour over the cake with chocolate fondant and decorate with nuts or cherries.
Serve this delicious homemade cake on a light-colored dish - the dessert will look very advantageous on it.
