Biscuit Ingredients:
- chicken eggs - 4 pieces;
- ground walnuts - 125 gr;
- sugar - 125 gr;
- ground white crackers - 50 gr;
- tangerine - 1 pc.
How to cook a biscuit with nuts, tangerines and breadcrumbs
First of all, wash the tangerine thoroughly, cut it and remove the seeds. Puree it in a blender.
Choose larger eggs for biscuit. I take them straight from the fridge. We carry out manipulations to separate the yolks and proteins.
The extracted proteins need to be whipped until a strong foam. We put them in the refrigerator.
Beat the yolks together with sugar until thick sour cream.
In the beaten yolks, add tangerine puree, ground nuts (I pre-calcine them so that they are more fragrant) and crackers. I make crackers myself. I dry the stale pieces of buns and loaves in the oven, and then grind them with a blender.
We mix all the ingredients. And add a third of the whipped protein. Gently and gently mix everything. We repeat the operation with the protein twice more.
As a result, we get an airy biscuit dough.
This amount of dough is enough for a 22-23 cm form. The finished fluffy biscuit can be cut in two. If you want a taller one, use the 18-20 cm form.
