Real bird's milk cake - how to cook at home, a simple recipe

Before proceeding to the recipe, I would like to tell you that the history of the origin of this unusual cake leads to the Moscow restaurant Prague, in 1920. Culinary experiments came up with this incredible recipe, and after many years of baking this delicious cake, a patent was issued for it. Now, finding a recipe for making Bird's milk is not a problem. There are a lot of culinary sites on the Internet where you can find it. But in this recipe I will tell you how it is customary to cook it at our home.

Dough Ingredients:

flour - half a glass;

oil - 100 grams;

egg yolks - 6 pieces;

sugar - 1 cup;

soda - a third of a teaspoon;

vinegar - 1 tablespoon.

Soufflé Ingredients:

gelatin - 1 tablespoon;

boiled water (cold) - half a glass;

egg whites - 6 pieces;

citric acid - a third of a tablespoon;

sugar - 2 cups.

Glaze Ingredients:

sugar - 1 cup;

cocoa powder - 2 tablespoons;

oil - 50 grams;

water - 3 tablespoons.

How to make bird's milk cake

For proper preparation of the cake, we need to separate the eggs, namely, the proteins from the yolks. I note that eggs for the test must be taken from the refrigerator. We send the separated proteins back to the refrigerator, and start the dough with the yolks. We combine the ingredients in the following sequence: yolks, soft butter, soda, flour, granulated sugar, quenched vinegar. Put the prepared dough on a baking sheet greased with oil. Bake in an oven preheated to medium temperature. The finished cake should be removed from the baking sheet hot, let it cool and cut horizontally into 2 halves. Now, we have 2 cakes. Let's move on to the next step.

How to cook soufflé Bird's milk

Pour the gelatin with boiled water, but already cooled down. Let it swell for 1 hour. Next, put the mixture on low heat and stir. We make sure that it does not boil, and the gelatin dissolves.

Now, take cold proteins (those that were in the refrigerator) and beat together with citric acid. You need to beat them so that you get a thick foam. In the process of whipping, add the entire norm of sugar, but not all at once, but gradually. At the end of whipping, do not forget to throw a pinch of vanillin into the proteins. And at the very end, we introduce diluted liquid gelatin.

Now, this mass should be put in the refrigerator. When it starts to seize, you should pour it on the cake, spread it and cover it with the second part of the dough.

How to make frosting

Mix cocoa powder with a small amount of granulated sugar (we do this so that the mixture is better mixed). Now, add water, add oil and the remaining sugar. Carefully knead and put on fire. Stir little by little and make sure that all the sugar is dissolved, bring to a boil. Finished, slightly cooled chocolate icing decorate the cake from all sides, including the top. The souffle cake is ready, put it in the refrigerator for further cooling.
