Ingredients:
For one cake (diameter 28 cm):
- 5 egg whites;
- 200 grams of sugar.
For cream filling:
- 10 yolks;
- 10 tablespoons of sugar;
- 250 ml of milk with a fat content of 2.5%;
- 250 grams of roasted hazelnuts;
- 100 grams of butter;
- 250 grams of cream with a fat content of 35%.
To decorate the cake:
- 200 grams of blueberries or other berries of your choice;
- cream - about 150 ml.

Starting the preparation of dessert, I advise you to take care in advance to cool the bowl in which you will whip the egg whites. In addition, eggs and cream should be cooled. But the butter should be left for about 30 minutes at room temperature to soften.

For the cake, we need 2 cakes, so we use 10 eggs. Separate the cooled whites from the yolks and beat until the mass turns white. After that, we continue to beat, gradually adding the sugar put according to the recipe. Beat egg whites with sugar until stiff peaks form.
Cover the baking dish with parchment, preheat the oven to 150 degrees and spread the meringue evenly on the parchment, leveling with a spatula. Bake at 150 degrees for 40 minutes. Readiness can be checked with a toothpick or a wooden stick (when piercing the cake, it should be dry). Allow the cake to cool and carefully transfer to a dish, then remove the parchment. Beat the whites for the second cake just before baking it.
How to cook butter cream on yolks
Beat 10 yolks with 100 grams of sugar. Beat until the mass increases in volume. Add milk to the mixture and put on a small fire. Cook the mixture while stirring constantly. Don't let her boil. As soon as the cream on the yolks thickens, immediately remove from heat so that it does not curdle. Let cool.
Add 100 grams of softened butter to the cooled cream, mix. Add 100 grams of cream and beat with a mixer.
