Creamy curd cream - the best cream for decorating cakes and pastries
Today I will cook a very simple and tasty thick confectionery cream from curd cream cheese and cream. In my opinion, this is the best cream for decorating cakes, pastries and other desserts. The cream is made on the basis of creamy curd cheese and chocolate. You can use white, milk or dark chocolate, then the cream will acquire a different taste and color. To make cream for decorating cakes, we need:
- 350 grams of cream cheese cheese 70% (I have Cheese cream);
- 300 grams of 33-35% cream;
- 250 grams of white chocolate;
- 80 grams of powdered sugar with vanilla.
How to make cream cheese cream for cake decoration
We start the preparation by melting the selected chocolate and giving it time to cool.
In the meantime, pour cold cream into a deep glass and start the whipping process from the lowest speed, gradually moving to medium. After the cream begins to increase in volume, pour in the powder and beat the mixture until fluffy and stable mass.
In a separate bowl, beat the cream cheese with the cooled chocolate until completely combined. Then, remove the mixer and use a spatula to mix the cream into the curd-chocolate mass. For better stabilization, we tighten the cream-curd cream under the film and place it in the cold for 40 minutes.
After the specified time, with a cooled thick pastry cream made from cream cheese and cream, fill a pastry bag with a nozzle pre-installed in it and you can decorate a cake or any other dessert.
To tint the butter cream, you need to use food coloring, fat-soluble. Butter-curd cream keeps its shape well, and the ease of preparation at home makes it affordable for beginner confectioners.
