- ¼ tsp fine salt

How to make shortcrust cakes for an open-crust cake
- We start cooking by melting the butter in a heat-resistant bowl and cooling it to a warm state (25-27 ° C). In the meantime, mix eggs with salt in a bowl and begin to beat with a whisk until the whites and yolks are completely combined. Then, pour in the oil, add sour cream and change the whisk to a spatula.
- At medium speed, mix the contents of the bowl and pour in the sifted flour in parts. At the end of the kneading, we switch to a low speed so that the kneaded dough gathers into a lump.
- We shift the resulting dough on cling film and wrap it. We place the finished dough in the cold for 35-40 minutes. While it is cooling, preheat the oven to 180°C.
- After cooling, the proposed shortbread cakes for the Digit cake are easily cut into the required number of pieces. It perfectly holds its shape and does not spread.
- On Teflon paper, roll out shortbread cakes of the size and shape you need. Their thickness should be 3-4 mm, but not more than 5 mm. Otherwise, the finished cake may turn out uneven.
