I will warn you right away that this is not the easiest recipe and it will require some effort, time and skill from you. But by patiently and step by step following the preparations described below, you will be rewarded for your painstaking work. Ingredients:
Chocolate biscuit:
- 5 chicken eggs (large);
- 80 grams of dark chocolate;
- 220 grams of granulated sugar;
- 200 grams of flour.
Pineapple cream:
- 1 can of canned pineapples (or 250 grams);
- 10 grams of powdered gelatin + 60 ml of water;
- 350 ml of water;
- 250 grams of sugar;
- 2 tablespoons of fresh lemon juice.
Butter cream:
- 820 ml 33% cream;
- 400 grams of Mascarpone cheese;
- 300 grams of vanilla powdered sugar;
- 60 grams of milk chocolate;
- pink food coloring.
To decorate the cake:
- blue confectionery beads;
- 20 ml 10% cream;
- 20 grams of dark chocolate.
How to cook a cake for March 8 at home

- First of all, melt the chocolate in a water bath.
- We drive all the eggs into the mixer bowl without separating the proteins and yolks and start beating at medium speed. When the yolks are combined with the whites, add sugar in portions.
- Continue beating at high speed until the mixture is fluffy and the sugar is completely dissolved.
- Add melted chocolate, gently mix it with the sweet egg mass.
- Add flour in batches and stir until smooth. Chocolate biscuit dough is ready.
We divide the dough into two parts and bake two cakes at t \u003d 170 ° C for 13-14 minutes. From the obtained chocolate biscuits we cut out two cakes with a diameter of 26 centimeters. If desired, you can bake biscuits immediately in a round shape.
Pineapple cream with gelatin
- Cooking begins with soaking gelatin.
- Pour water into a bowl and add sugar. We make syrup from these ingredients. Before boiling, pour in freshly squeezed lemon juice.
- When the syrup is ready, add canned pineapples without the syrup in which they were in the jar. As soon as the pineapples in the syrup boil, remove them from the heat.
- We pierce the pineapples with a blender to get a homogeneous mixture.
- We introduce swollen gelatin and dissolve it in jelly.
- We line the confectionery ring, and preferably a detachable form (d = 24 cm), with cling film and place it on a cutting board. Pour pineapple jelly into a mold, cool and put in the freezer for 3 hours until completely solidified.
How to make buttercream with mascarpone
- To prepare the cream, we first of all melt the chocolate and leave it to cool to room temperature.
- I draw your attention to the fact that for further preparation, the cream should be well chilled, and the mascarpone should be at room temperature. So, we begin to whip the cream at low speed. Gradually increase the speed. When the cream has slightly increased in volume, add powdered sugar in portions. As a result of whipping, the cream should have stable peaks and double in size.
- Separately, beat the mascarpone to a mushy state and combine it with the cooled melted chocolate.
- Using a spatula or spatula, fold the cream into the chocolate mixture. Butter cream with mascarpone is ready.
To further decorate the cake with cream flowers , put 10 tablespoons of the resulting mass into a separate bowl and add 3-4 drops of food pink (or whatever you need) paint to it and mix gently.
How to assemble a sponge cake with a jelly layer
- We will form our festive dessert upside down. So, we cover the forming ring with a film and place it on the plank with the film down. The whole cream, visually, is divided into four equal parts. We spread the first part of the cream on the bottom of the mold, then put the first chocolate cake and press it lightly.
- Cover with the second part of the cream.
- Put the frozen jelly layer into the cream and melt it a little in the white mascarpone cream. It should turn out as in the photo.
4. We close the jelly cream with a third layer of butter cream, and put the second chocolate cake on it. We remove the form in the refrigerator for 5 hours or overnight.
5. We turn the frozen cake over onto a flat dish or a special substrate, remove the film and remove the ring.
How to decorate a cake for March 8
- With the fourth part of the cream, which we should have left, we process the side surface of the cake.
- To apply the pattern, prepare liquid chocolate. To do this, heat the cream and dip the pieces of chocolate into them. We wait for it to melt and then mix. When the chocolate mass is at room temperature, it's time to draw a pattern on the biscuit cake .
- While we are waiting for the chocolate to cool, we will apply cream decor (I have it pink) along the side of the cake and make the number “8” from small flowers in the center of the holiday dessert.
