Colored meringue on a stick - protein decoration for cake and candy bar
To decorate desserts, cakes, pastries and, which have become popular today, candy bars (children's sweet tables), they often use hand-made colored meringue on a stick. Such a protein decoration is also called a candy bar. Today I want to share a very simple way to create such a rainbow meringue that can be used to decorate not only a children's cake , but simply as a beautiful dessert at a children's party. A step-by-step recipe with a photo will help you easily and simply make such a tasty and beautiful decoration from a multi-colored protein cream.
For the colored meringue we need:
- 200 grams of protein;
- 400 grams of powdered sugar + 8 grams of vanilla;
- ¼ tsp fine salt;
- 1 teaspoon fresh lemon juice;
- water-soluble food coloring;
- wooden sticks/skewers.
How to make colored meringue on a stick at home
Starting cooking, preheat the oven to 80°C.
Very carefully separate the yolks from the whites. We don't need egg yolks in this recipe. And put the proteins in a bowl with salt and beat until plentiful bubbles. Now, increase the speed of the mixer, beat the proteins until a white fluffy mass appears. We begin to introduce powdered sugar mixed with vanilla.
Beat the whites until they are completely white, only now you can add lemon juice. At the same time, the mass immediately acquires a glossy sheen. When lifting the whisk, the peak looks like a bird's beak.
Only at this stage we divide the resulting mass into portions and paint in the desired colors.
We place the colored parts of the meringue in a pastry bag with a nozzle (I have an “open arrival”), one spoonful of each. We do not mix. The photo shows what a multi-colored mass is obtained.
From the obtained protein cream on Teflon parchment, we deposit various forms of the size you need: spirals, stars or marshmallows.
We immediately insert the skewers into the desired desserts and send everything to the oven, heated to 80 ° C, for 1 hour.
After such drying, let them cool and very easily separate from the paper.
While waiting to be used as a cake decor or candy bar, the finished colored meringue on a stick can stand in a glass or vase. But, if you have a small sweet tooth at home, then a rainbow protein cake risks not waiting in the wings. 🙂
