Do-it-yourself cream cake flowers
A very important aspect in the preparation of cakes and pastries is their design. Decorating a cake with cream flowers is the most common type of such decor. We will make flowers for the cake from butter protein custard . For work we need:
- slightly chilled protein custard;
- fat-soluble food coloring;
- pastry bags;
- confectionery nozzles;
- food paper or thick file;
- corn sticks;
- wooden skewers;
- pastry or regular scissors.
How to make flowers from cream with your own hands
To begin with, we divide the finished cream into portions and color each of them in the desired color. One of the servings must be green, as we will make leaves for flowers from it.
Insert a nozzle into a pastry bag. It should be as in the photo: narrower on one side and wider on the other.
We fill the bag with the previously prepared oil-protein cream. It can be single color or two color. In my case, I filled the bag with white and pink protein custard.
From food paper or a dense file, cut out squares 7cmx7cm. To make it more convenient to make flowers from cream, you can use a special mold, the so-called confectionery nail. It is very convenient, especially for beginner confectioners. We install one cut out square on it. To prevent the paper from slipping, put a drop of cream on the mold, place a paper square on it and press it down. The photo shows how it looks.
How to make cream roses
We wrap the bag with cream on top and fix it. Apply a small amount of cream to the center of the square.
Hold the cream bag in the working hand with the wide part of the nozzle down. This position is shown in the second photo. Lightly press the bag, squeeze out the cream, and draw an arc around the central part of the rose on the square. Then, we make a second arc, but overlapping the first, as in the photo. Similarly, make as many petals as you need.
Thus, we can make both large and small roses. It all depends on the number of petals you have made.
Transfer the flower made from cream together with the square to a cutting board and send it to the refrigerator.
Exactly the same technique of applying petals is used to make roses on corn sticks. Only in this case, the flowers are immediately planted on a cake or pastry without additional cooling described above.
To make cream roses on corn sticks, take a skewer and stick one corn stick on it.
Then, we apply the cream arcs in the manner described above. At first they are small and, as the rose forms, we increase them in size. The cream should be applied so that half of the corn stick (lower part) remains untouched. Thus, we form a rose on the upper half of the stick. With special confectionery scissors we fix the lower petals under the rose. Carefully remove the corn stick from the skewer and insert it in the right place in the cake.
This method of forming flowers from cream is especially suitable when they need to be fixed on a non-horizontal surface.
Cream violets on the cake
For their manufacture, we need such a nozzle as in the photo. Although I often use a nozzle for making roses. Cream violets and with it I also get beautiful.
Hold the bag with the concave part of the nozzle towards the left side. Plant each petal starting from the top and, leading it to the center, slightly vibrate the hand up and down. You can apply a yellow core to the center of the flower. I did not do this, as I will decorate it with confectionery beads. We remove the finished violet in the cold.
The cooled butter-protein custard flowers keep their shape perfectly, are easily removed from the substrate, which makes it easy to place them on the cake in the right place.
It remains only to apply green leaves around each flower, arrange the cores and sweet flowers from the cream are ready. Cream leaves can be easily and simply made using a special nozzle. The application technique is similar to violets.
