Plain peanut cake layers (no flour)
Often eminent cooks unfairly forget peanuts, using more expensive and popular nuts in their dishes. And let them say that it is not a nut by birthright, but I really like its taste and rich aroma. Cake Ingredients:
- chicken eggs - 3 pcs.;
- sugar - 180 gr;
- milk - 125 ml;
- peanuts - 500 gr;
- baking powder dough - 1 tbsp;
- salt - 1 pinch;
- butter - 2 tbsp.
How to make peanut cake layers at home
For baking, you need peanuts, peeled and roasted. It must be ground in a blender with two tablespoons of sugar (out of the total amount indicated in the recipe) to a state of fine crumbs. Don't try to get flour: peanuts are very fatty, they will release oil and turn into a paste, bypassing the flour phase.
Eggs try to take larger and from the refrigerator. We need to separate the whites from the yolks. Add a pinch of salt to the proteins and beat them until a dense foam. If you turn the container with them over, they do not even move - this is a sign of correctly whipped proteins.
Beat the yolks with the remaining sugar until white. Add butter, softened at room temperature, and beat again until smooth.
Pour milk into the mixture, add peanuts and baking powder. Stir until nuts are evenly distributed.
Add a couple of tablespoons of whipped proteins and gently mix with a spatula with scooping movements. Add the rest of the proteins in the same way.
Pour the finished peanut dough onto a baking sheet with parchment. In my case, its dimensions are 30x40 cm. We send it to the oven, heated to 180 ° C. Baking time is about half an hour. The crust should brown. If you have a smaller form, the thickness of the dough layer increases accordingly, which means that you will have to bake a little longer.
Let the pastry cool completely. Then, remove it from the baking sheet, carefully separate the parchment and cut into cakes of the desired size.
Such cakes with peanuts can be alternated in a cake with biscuit, sand or puff. very tasty cake is obtained only from peanut cakes. It is better to combine them with oil or protein creams: the dough is wet and heavy, it simply cannot absorb moisture from the custard or creamy layers.
