Homemade biscuit cake with emerald curd cream

So sometimes you want to surprise your friends / relatives with some unusual dessert. For this occasion, a delicious biscuit cake with cream cheese cream (and all of the above - a delicate emerald color) fits perfectly. This easy recipe, with step-by-step photos taken, can be prepared independently at home. This emerald biscuit cake is perfect to treat yourself and friends to a wonderful Saturday night. Ingredients:

Emerald Homemade Biscuit:

  • 4 pieces of large chicken eggs;
  • 200 grams of granulated sugar;
  • 200 grams of flour;
  • 1 vanillin pod;
  • 1/2 bunch of fresh parsley;
  • 5 ice cubes;

Emerald Cream Cheese Cream:

  • 350 grams of cottage cheese 9%;
  • 400 ml 35% cream;
  • 0.5 teaspoons of vanillin;
  • 300 grams of powdered sugar;
  • 180 grams of 82% butter;
  • Green food coloring.

How to make emerald biscuit cakes

Place the chopped parsley in a blender, add ice cubes to it and grind to a porridge state.

ATTENTION: Do not use water instead of ice (!), as the parsley will lose its emerald color.

We recline the entire mixture on a sieve with gauze. We only need a thick part of it.

Beat the yolks with sugar until fluffy light mass. Cut the vanilla pod in half lengthwise, scrape out the contents with a knife and add to the yolks. We beat.

Separately, beat egg whites until stiff peaks. Add the squeezed parsley. We mix.

Take a spatula/spatula and fold the egg whites into the yolk mixture.

At the very end, sift the flour into the dough and mix until smooth.

We bake an emerald sponge cake (d=24 cm) in a silicone mold with an oven temperature = 160°, approximately 35/40 minutes. Cut the cooled cakes into two equal parts.

How to make buttercream cake

We wipe the cottage cheese several times through a colander with a fine mesh.

Beat soft butter with powdered sugar and vanilla for no longer than 40 seconds. Mix it with grated cottage cheese using a wooden / silicone spatula.

Whip the cream until fluffy and, in the same way, mix it into the curd mass.

Set aside part of the white cream for decoration and put it in the cold.

In the remaining cream, add a couple of drops of green food paint - mix.

We set the confectionery ring at 26 cm, put the first biscuit cake, then a layer of cream and again the cake. We cover with a layer of cream and put our emerald cake in the refrigerator for 2/3 hours.

How to decorate a biscuit cake at home

The cream is well frozen, you can remove the ring and start decorating the cake.

We transfer it to a dish. We place the white cream in a pastry bag with a nozzle and apply patterns to the sides and top of the cake. What patterns will be depends on you and the purpose of the cake: just for the weekend, for a birthday, or maybe it’s your wedding cake ... You can use white cream cheese cream, confectionery beads and the photo below to decorate the cake like me.
