Homemade Salted Caramel Cake - Delicious Caramel Sauce

To make caramel sauce, we need:
- 200 grams of white or cane sugar;
- 160 grams of 33% cream;
- 40 grams of 82% butter;
- 1/3 teaspoon of fine sea salt.
How to make homemade salted caramel
Put the entire volume of sugar in a saucepan with a completely dry bottom and send it to the fire. As soon as the bottom layer of sugar has melted and a brown color has begun to appear, you need to start mixing the remaining sugar with a silicone spatula. This will melt all the sugar evenly and prevent the bottom layer from burning.
While we are stirring the syrup and melting the sugar evenly, we heat the cream on the next burner, but do not bring it to a boil, otherwise it will curdle. As soon as all the sugar has melted homogeneously, pour in the salt, pour in the hot cream and mix everything actively. Remove the saucepan from the heat, continuing to stir for a while.
Let the caramel cool down to 48-50 ° C and add butter. When it disperses over the surface of the caramel, mix the whole mass.
Warm homemade salted caramel is transferred to a storage container. We close it with a film in contact with caramel and store in the refrigerator.
