Two-color curd jelly cake with biscuit
A beautiful and delicious jelly cake at home can be prepared in many ways. no-bake recipe , or you can use this recipe and make a flip cake, where a quick-baked soft biscuit will serve as the basis.
Products that are required for the biscuit base: 2 eggs, 100 g of sugar, 100 g of flour, 1 teaspoon of baking powder.
To bake a biscuit, beat all the ingredients, place in a greased detachable form and bake a biscuit cake.
To form a jelly cake at home, we choose any deep dish you have at hand. The main thing is that the radii of the bottom and cake coincide. For these purposes, a bowl with straight sides or a plastic lid from a store cake is suitable. We place a clean plastic bag in the container so that it fits entirely to the bottom and sides.
Products for the filling: 400 g of cottage cheese, 400 g of sour cream, 150 g of sugar, 20 g of gelatin, 150 ml of water, 200 g of berries (blackcurrant, blueberries or cherries).
Pour gelatin with cold water and leave to swell for ten minutes. After, over low heat, the mixture should be heated until the gelatin is completely dissolved and let it cool, but it will not begin to harden yet. At this stage, the gelatin should be divided into two equal parts.
Peeled berries should be crushed in a combine, after which they should be passed through a colander or gauze and get a homogeneous puree. Add 2 tablespoons of sugar. If desired, the amount of sugar can be increased, the criterion is that the berry puree is not sour. Whisking constantly, pour in one part of the gelatin and continue to beat for another two minutes. The resulting mixture should be poured into an arbitrary form with a height of 2-3 cm and put in the refrigerator to solidify.
Next, the cottage cheese, sour cream and sugar must be beaten until a homogeneous, grain-free cream is obtained. After the desired consistency, you need to pour the second part of the gelatin into the curd mass, after which we continue to beat for at least two minutes.
Frozen berry jelly should be cut into cubes, spread (not very thick) on the bottom of our prepared bowl. Fill them with cottage cheese jelly and send them to the refrigerator to seize.
Then, in the same way, we form the next layer and again send it to the refrigerator. We proceed in the same way until the components run out. The top layer should be curd. We spread the biscuit on it, press it down and, again, place it in the refrigerator until the dessert is completely solidified.
When the jelly layers are completely frozen, we take out our two-color cake from the mold by the bag, turn it over with a biscuit down and put it on a dish. Carefully separate the package, its folds and irregularities will give the cake an original look.
We cut a beautiful and tasty curd cake into portions and eat with pleasure.
