This French strawberry cake got its name from this tasty and no less beautiful berry (French fraisier - strawberry). With a little effort, you can make Frazier cake yourself at home. I note that if you do not plan to transport it, then you can not use gelatin. The cream in this case will turn out more tender and less dense. I tell you in detail how to cook this French delicacy in a step-by-step photo recipe.

To make the cake we need:

  • 1 fluffy and airy butter biscuit ;
  • 750 grams of fresh strawberries;
  • ¼ serving of dark chocolate glaze

For Muslin cream we need:

  • 300 ml of milk 3.6-6%;
  • 100 grams of fine sugar + 1/3 tsp. vanilla extract;
  • 3 yolks (from eggs D-0);
  • 150 grams of 82% unsalted butter;
  • 5 grams of gelatin + 50 ml of water;
  • 25 grams of premium wheat flour;
  • 25 grams of starch (necessarily corn).
  • 1 st. a spoonful of invert syrup + 50 ml of boiling water (for soaking cakes).

How to bake a frezier cake

First of all, prepare a biscuit in butter , cool it well and divide it into two cakes of equal size.

How to make muslin cream

In a saucepan or ladle, mix the yolks and ½ serving of sugar until the yolks appear white. Add flour and starch and mix again.

Soak gelatin. On the stove, heat the milk with the remaining portion of sugar and vanilla extract (it can be replaced with powdered or capsicum vanillin). We heat it to a very hot state, but do not bring it to a boil. And slowly begin to pour the warmed milk to the yolks and mix the whole mass so that the yolks do not boil.

We put the milk mixture with the yolks on medium heat and brew it with constant stirring with a whisk. We remove the cream from the stove and wait until it cools down to 75-70 degrees and introduce the gelatinous mass. We dissolve the gelatin in the cream and leave it to cool, do not forget to mix it with a spatula.

Butter (it should be soft) beat until white and fluffy. Then, we continue to beat it together with the brewed and well-cooled cream. When all the ingredients are whipped together, the Muslin cream is ready.

How to decorate a frezier cake

We assemble the cake immediately on the serving substrate / dish.

We wash and dry the strawberries in advance, then cut off the tails.

We put the first cake and soak it with syrup. We place an acetate tape in the confectionery ring and put the ring on the cake. Take a few strawberries and cut them into two halves. We install them tightly to the ring with a cut outward.
