Royaltine (La Royaltine) or Feuilletine (Feuilletine) is a French recipe for crispy crumbs, which is made from a dough that is very similar to biscuit. This decor is called biscuit or waffle crumbs. It is used to decorate and decorate various confectionery dishes, cakes and desserts. Such a crispy crumb is also used in the manufacture of sweets and pralines. Professional confectioners, most often, purchase it ready-made in large packages weighing 5-10 kilograms. But we, confectioners who bake for our family, have the opportunity to make such decor for cakes and other desserts with our own hands. My detailed recipe, step by step photo, will allow you to make these royalty flakes to decorate your goodies.

For royalty we need:

  • 35 grams of softened sweet cream butter 72.5%;
  • 35 grams of fine granulated sugar (or powdered sugar);
  • 35 grams of protein;
  • 1 drop of vanilla essence (or 1 gram of vanillin);
  • 35 grams of sifted premium wheat flour;
  • 20 grams of cocoa butter.

How to make your own crunchy royalty flakes

We begin to prepare our waffle crumb, decoration for cakes and desserts, by heating the oven to 180 degrees.

When the oven is on, put the soft butter, protein and vanilla essence with sugar in one bowl. I didn't have fine sugar and powdered sugar at the moment, so I put regular sugar in a glass and blew it with a hand blender.

Mixing ingredients for royalty

Using a whisk, mix all the ingredients in a bowl and sift the flour into it through a colander (sieve). Mix the flour thoroughly into the dough.

Now, spread the finished dough on the center of the silicone mat or parchment. Using a spatula, level it to a very thin layer. You need to make a layer so that it shines through. I get a layer no higher than 1 mm.

We put the baking sheet in a hot oven on an average level for 8-12 minutes. While the cake is in the oven, melt the cocoa butter.

The baking time will depend on the quality of the oven. The main thing is to wait until the cake reaches a beautiful color, reminiscent of caramel. A color like in the photo means that the cake is ready. We take it out of the oven and immediately, without allowing it to cool, grease it with melted cocoa butter. Now we are waiting for it to cool completely.

After the cake has cooled, break it into pieces. The photo shows how thin the cake should be. I put three small pieces on the main light-colored cake. At the time of baking, this part of the dough did not reach the desired color and, accordingly, was baked, but remained soft. These pieces can just be eaten, but they are no longer suitable for royalty.

Grind all the pieces with a rolling pin until crumbs of the size you need. At the time of preparation, the size of such waffle crumbs can be adjusted. You should not use a blender to grind royalty.

Ready-made royalty flakes can be stored in a jar with a tightly sealed lid.
