Almond biscuit with yolks and butter - chiffon biscuit
Delicate and airy, flour yolk biscuit is easier to prepare than you might imagine. This homemade cake biscuit will delight you with the most delicate texture and light nutty aftertaste. It turns out it is very tasty and slightly moist, due to the presence of butter. This almond sponge cake is just perfect for mousse cakes. A step-by-step photo recipe for a chiffon biscuit baked in butter, egg yolks and almond flour demonstrates all the intricacies of making it at home.
Ingredients:
- eggs - 3 pcs.;
- almond flour - 50 gr;
- wheat flour - 20 gr;
- sugar - 90 gr;
- butter - 50 gr;
- baking powder - 1 tsp
How to bake an almond biscuit with yolks and butter
Let's start preparing the cake for the cake by melting the butter. It is important not to let it boil. We need it to be hot by the time we use it.
We measure out the required amount of almond flour. It can be prepared independently, resin in a blender peeled almonds or almond petals with 1 tbsp. powdered sugar. In extreme cases, even unpeeled roasted almonds can be used. The taste of the biscuit will not lose, just in its crumb there will be dark inclusions of the skin.
Sift almond flour with flour and baking powder.
For a biscuit, you need 1 whole egg and 2 yolks, pour sugar into them. Leave the whites in the refrigerator until required or freeze. You can also cook this biscuit on two whole eggs.
Beat the yolks with sugar until a thick light mass is obtained and the volume increases by about 2-3 times.
Combine beaten egg yolks with almond mixture. It is better to do this with a spatula in 3 doses.
Now, along the edge of the bowl, pour in the hot oil and mix gently with a spatula, scooping the mixture from the bottom.
Pour the dough into a 22 cm diameter mold lined with parchment.
We bake the almond biscuit at 180 degrees for 15-20 minutes until lightly browned. In the finished cake, the surface should spring when pressed. It is better to let it cool in the form and only then take it out.
I have to say that this is the best almond flour sponge cake I have ever baked for the delicious and tender blueberry pear mousse cake with chocolate icing that I am going to make today based on it.
