Marbled chocolate brownie with cream cheese
Today I will tell you how to cook a delicious marbled chocolate brownie with cream cheese. An incredibly interesting combination of liquid and dense texture of two types of dough that complemented each other perfectly in this recipe. For the cheese mixture we need:
- 1 cup (250g) cream cheese
- ¼ cup (50 g) granulated sugar;
- 2 tbsp. tablespoons of grated orange peel;
- 3 art. spoons of fresh orange juice;
- 1 teaspoon corn starch;
- 1 chicken egg (caliber D-0 or D-B).
For chocolate dough:
- 250 grams of dark chocolate (break into pieces);
- ¼ cup (60g) butter 82%;
- 150 grams of white granulated sugar;
- 2 teaspoons vanilla extract (or essence);
- 2 pcs. large chicken eggs, lightly beaten with 2 tbsp. spoons of cold water;
- 75 grams of wheat flour (w / c or extra).
How to bake cream cheese brownies
Before starting work, turn on the oven so that it warms up to 180 ° C.
Cheese mix
In a bowl from a mixer, break the cream cheese (I use 70% mascarpone) along with sugar to the consistency of porridge. This is easier to do if the cheese is at room temperature. Then, add the zest, starch and orange juice. We mix everything.
It remains to add the egg and beat lightly with a mixer. The finished cheese mixture turns out to be slightly liquid, this can be clearly seen in the photo.
Chocolate brownie dough
If using a microwave oven, melt the chocolate pieces along with the butter on low power. We take out the form from the oven every 10-12 seconds and mix it.
Add sugar and vanilla extract, beat and at the same time cool the mass.
Now, we introduce pre-beaten eggs with water, mix. We complete the preparation of the chocolate mixture by adding flour. It should be much denser than the cheese mixture.
When both mixtures are ready, simply form a marbled chocolate brownie with cheese. Lightly grease a square or rectangular baking dish with oil and place Teflon parchment in it, which is easily glued to the sides due to the oil. We spread the entire chocolate mixture and distribute it over the entire bottom of the form.
We spread the cheese mass on top and let it spread over the entire chocolate base.
Now, you need to slightly mix the layers in large circular motions, as if drawing a spiral. For this I use a sushi stick. You can also do this manipulation with the thin tip of a teaspoon.
Baking time for the cake is approximately 25-30 minutes. Cool the finished marble brownie right in the mold.
Now, it's time to remove it from the mold and cut into squares.
