- 600 ml cream 35%;

- 10 grams of gelatin + 60 ml., water;
- 2 teaspoons of brewed coffee +70 ml., water;
- 250 grams of powdered sugar;
- ½ vanilla bean
- 90 grams of dark chocolate;

- 50 ml., cream 10%,

Let's start preparing the dough by breaking the chocolate into pieces and melting it in a water bath.

We spread the dough in a mold and bake it in a preheated oven (180 ° C for 30 minutes). We cool the finished biscuit in the form. Then, we take it out and cut it into two equal cakes, as in the photo.
How to make cream mascarpone with gelatin
Soak gelatin.
Brew coffee with vanilla seeds. Also, dip the cut pod into the coffee. Let the coffee cool down and strain.
Whip the cream on low speed until it slightly increases in volume. Then add powdered sugar and continue beating at high speed. When the cream has thickened and holds its shape well, it is ready. How they should look at the end of whipping can be seen in the photo.
Beat mascarpone cheese (room temperature) until smooth. Add melted chocolate (70 grams) and mix it completely.
Then add coffee and mix everything well.
Dissolve the swollen gelatin in a water bath. You can not bring it to a boil (!) So it will lose its properties. Add gelatin to mascarpone mixture. The entire resulting mass should be at room temperature so that the cream added further does not “float”.

We set aside 8-9 tablespoons of cream in a separate bowl and mix it with melted chocolate (20 grams). He's going to decorate.

How to decorate a chocolate cake
We put the first biscuit cake on a flat surface, set the confectionery ring, and spread half of the cream portion.
We put the second part of the chocolate biscuit, which we cover with the second half of the cream. Put it in the refrigerator to chill.
In the meantime, we heat the cream and put chocolate in it. When the chocolate has melted, mix it with cream and refrigerate. We shift it into a pastry bag, cut off a small tip through which we will draw.
When the cake is well frozen, remove the confectionery ring, and simply cut the cake into the desired number of servings, as in the photo. Each piece is decorated with chocolate, and then with chocolate cream. Add confectionery beads.
