Red Velvet Cake at Home - An Original Step-by-Step Recipe
Today I made an incredibly delicious and very beautiful white and red velvet cake. I divided the preparation into stages. On the first day, I prepared a red velvet biscuit, and left the protein butter cream with cream, vanilla mousse, mirror glaze (glaze) and cake assembly on the second day. This greatly simplifies all the complexity in the preparation and design of the cake. I will tell you step by step about how to bake a Red Velvet cake in my photo recipe. To prepare a red and white cake, we need:
- 1 Red Velvet Sponge Cake (cut in two)
- 1 serving protein custard with butter and cream;
- 1 serving of white chocolate glaze + 1 teaspoon of red dye;
- 2 tablespoons of white chocolate glaze + 0.5 teaspoons of golden kandurin;
- gold and silver confectionery beads.
For vanilla mousse:
- 150 ml 4% milk;
- 200 grams of white chocolate;
- 70 grams of white sugar;
- 7 gamma gelatin + 50 ml of water;
- 450 ml 33%-35% cream (chilled);
- 10 grams of vanillin.
How to make red velvet cake at home
We start cooking with a lush velvet cake. As I said, it is better to bake it in advance and after completely cooling, cut into two halves. Next, prepare the vanilla mousse and, as always, start by soaking the gelatin. Then, heat the milk with sugar to 55 ° -60 ° C, dip the pieces of white chocolate into it. We wait a minute and start mixing chocolate with milk. As soon as the chocolate has melted, we introduce gelatin and dissolve it. We cool.
In a separate bowl, beat the chilled cream with vanilla to soft peaks. We introduce vanilla whipped cream into the cooled milk-chocolate mixture and mix by hand with a whisk. We get such a pale white mousse as in the photo.
Now it's time to assemble the cake. We put the first velvet cake on a flat surface, and put all the protein custard on it and cover with the second red velvet cake. Then, set the confectionery ring in diameter 1 cm larger than the cake itself. We line the inside of the ring with confectionery tape and put it on the cake.
Carefully pour the vanilla mousse over the cake and put it in the freezer overnight or for 6-7 hours. It should freeze completely. In the photo, the cake is after freezing and already without a ring.
Carefully remove the pastry tape from the cake. For now, you can return it to the freezer and start preparing the glaze.
I prepare a colored mirror glaze from a previously prepared white glaze (link to a detailed recipe in the ingredients). I put the required amount according to the recipe in a water bath, and when the glaze has reached 36 ° C, we separate two tablespoons and mix them with Kandurin. And the remaining glaze is mixed with red dye. We set the cake on a special elevation for coating with colored mirror glaze and begin to glaze it, applying glaze from two hands (red and golden). Then with a spatula we distribute the glaze from top to bottom.
We remove the remnants of the mirror glaze along the bottom of the cake with a wet and hot spatula. We transfer the cake to the stand.
It remains just to decorate our Red Velvet Cake. We process the lower side of the dessert with confectionery beads. You can also apply a small pattern with gel dyes, but this is up to you.
