Homemade Pancho cake with sour cream and raisins
Pancho's homemade cake is a delicious biscuit in two colors, generously soaked in delicate sour cream and covered with chocolate icing. It can be made with canned pineapples, cherries, nuts, or, as I did today, raisins. Pieces of delicious dessert just dissolve in your mouth. The process of its preparation is completely simple and any hostess who does not have culinary experience will master it. And if you adopt my simple recipe, supplemented with step-by-step photos taken, then you will undoubtedly succeed very quickly and tasty. 🙂
Ingredients:
for the biscuit dough:
- flour - 2 tbsp.;
- sour cream - 250 ml;
- eggs - 3 pcs.;
- sugar - 1 tbsp.;
- soda - 1 tsp;
- citric acid - 0.5 tsp;
- cocoa - 2 tbsp. l.;
for cream:
- sour cream - 0.5 l.;
- sugar - 1.5 tbsp.;
- lemon juice - 1 tsp;
for glaze:
- sugar - 3 tbsp. l.;
- cocoa - 2 tbsp. l.;
- milk - 50 ml;
- butter - 30 gr.
We will divide the preparation of our homemade sour cream sponge cake into stages and demonstrate each in detail.
How to bake a biscuit on sour cream
First of all, let's take care of our biscuits . Despite the fact that we will have white and chocolate dough, we will make it “in one fell swoop”. 🙂 Separate the yolks from the proteins and send them to different bowls. Add sugar to the yolks and a little salt to the whites.
Rub the yolks with sugar until white, and beat the whites into a fluffy, stable foam.
Combine the contents of both bowls together.
Add the rest of the ingredients that make up the dough except cocoa and do not forget to saturate the flour with air by sifting it through a sieve.
Pour a third of the resulting dough into a round form covered with baking paper and send to bake for 15 minutes at a temperature of 180 ° C.
Add cocoa to the rest of the dough and mix.
Pour the chocolate dough onto a baking sheet, which also needs to be covered with parchment. Remove the baked first cake and set the second to bake. The baking temperature is the same. While the chocolate cake is baking, you can start preparing the cream and glaze.
How to make sour cream
Pour the chilled sour cream into a bowl, add sugar and a little lemon juice there. Beat the mass with a whisk or mixer until it slightly increases in volume.
How to make chocolate icing for a cake
Send sugar and cocoa to a saucepan, mix and add milk. Set to warm over low heat, when it boils, remove from the burner and add a piece of butter.
How to Assemble a Pancho Cake
Cut the dark cake into squares about 3 by 3 cm.
Lubricate the light cake with sour cream. Then, send some of the cubes to “bathe” in sour cream. Take out the pieces from the "pool" and put them in the form of a slide on a light cake.
Top the cake with raisins or your favorite canned fruit.
Drizzle generously with chocolate icing .
Place the dessert in the refrigerator for at least 60 minutes to soak.
When it's time to treat yourself, just cut sour cream cake into portions and serve with any cold or hot drinks.
