Strawberry berry compote - jelly layer for cake
A delicious fruit or berry jelly layer is a great idea for making cakes with different flavors all the time at home. The fresh taste of strawberry compote perfectly complements the overall composition of the biscuit cake. A slightly sour taste stands out against the background of sweet layers of cream and cakes and rightfully takes its place in the very core of the cake. A step-by-step recipe with a photo will help you prepare a delicate strawberry berry compote at home.
To prepare the berry-jelly layer of the cake, we need:
- 750 grams of fresh or frozen strawberries;
- 210 grams of granulated sugar;
- 12 grams of gelatin;
- 70 ml of water;
- 120 ml water (only for fresh strawberries);
- 1.5 st. spoons of fresh lemon juice.
How to make strawberry compote for cake
First, soak gelatin in water in the proportions indicated in the ingredients.
Continuing cooking, we move on to the berries. Place strawberries without tails in a saucepan. If it is a fresh berry, then add water (120 ml). I have frozen strawberries, so I don't use water, I get it by defrosting. We put the saucepan on a small fire to speed up this process.
As soon as the strawberries have melted, increase the level of fire and wait for the contents of the saucepan to boil, not forgetting to stir the entire mixture.
Boil for no longer than 1.5 minutes and pierce the entire mass with an immersion blender.
We pass all the strawberry mass through a colander. At this point, the strawberry puree is ready. It can be transferred to a tight bag, cool and freeze. Then it can be used throughout the year for various culinary purposes.
And we return the puree to the fire, add sugar, add lemon juice and wait for it to boil. Then, remove from heat and introduce already swollen gelatin at a puree temperature not higher than 80 ° C.
We tighten the forming ring with a diameter of 24 cm with a film and place it on the board.
Pour all the strawberry mass into the mold and put it all night (or 5 hours) in the freezer.
When the strawberry compote is completely frozen, remove the ring. In this frozen state, the strawberry jelly cake can already be placed in the cake as a layer.
I always prepare any fruit or berry compote in advance, wrap it in film and store it in the freezer until the right moment.
When forming the cake, we take out the strawberry compote from the freezer and remove the film from it. The jelly layer holds its shape perfectly and smells of fresh strawberries.
