  • 110 ml fresh milk;
  • 10 grams of vanilla sugar;
  • 170 grams of granulated sugar;
  • 15 grams of gelatin plates;
  • 400 ml 33% cream.

As always, we start preparing the mousse by soaking the gelatin.

We put the yolks in a saucepan along with vanilla sugar, warm milk (50 ° C) and ordinary white sugar. Now, put the saucepan on the steam bath and stir the contents with a whisk until the mixture thickens. Only after that we squeeze the leaves of gelatin and dissolve them in the custard mass of the cream. Let it cool completely by covering with cling film. To speed up the cooling, you can put the saucepan on the loggia / balcony, but this is not necessary.

We whip the cream at that moment, when we have already made sure that the brewed cream mass has completely cooled down. Once the cream has reached soft peaks, stop whipping. We mix the whipped cream and custard mass on the yolks with a spatula, by scooping from the bottom and flipping up. After that, we transfer the prepared vanilla-cream-mousse cake mousse into a pastry bag and begin to collect ready-made layers of biscuit-mousse cake.

Assembling the mousse cake

We wrap the cutting board with a film and install a molding ring d = 26 cm. Install an acetate tape inside the ring (optional). We put the first biscuit cake on the bottom and soak it with half a serving of strawberry syrup. From the bag, first of all, spread the mousse cream in the space between the cake and the confectionery ring, and then, apply a layer on the cake itself. We take out the caramel-nut layer from the freezer and put it on the mousse layer. Press lightly on it so that it sinks into the mousse a little.

Then, again, there is a layer of mousse, in which we also drown the frozen strawberry compote.

We cover the compote with creamy mousse and put the second biscuit cake, which we also soak with strawberry syrup.

Put the last part of the cream mousse on top of the biscuit, gently smooth the top and sides of the cake and put it in the freezer overnight or for 7 hours. Next, take out the frozen base from the ring and remove the tape.

We immediately send our preparation for coating with chocolate velor and after that we transfer the almost ready berry mousse dessert to the cake plate for further decoration.

How to make a mousse cake
