The proposed heart-shaped currant mousse cake with mirror glaze has a very original and bright taste. In it, the sweetness and sourness of currants are combined into one bright texture and a very pleasant mousse dessert is obtained, which is hidden under a multi-colored glaze. For currant coolies we need:
- 60 grams of frozen or fresh blackcurrant;
- 20 grams of water + 1 s. a spoonful of lemon juice;
- 60 grams of sugar;
- 2 leaves of gelatin (10 grams).
For currant mousse:
- 2 tbsp. spoons of currant coolie;
- 320 grams of 33% cream;
- 220 grams of white chocolate;
- 50 grams of powdered sugar with vanilla;
- ½ serving of mirror glaze (glaze);
- food coloring: pink, yellow;
- shortbread for cake.

Preparation should begin with the fact that in a separate container we soak the gelatin.
Then, put the berries in a saucepan, fill them with water and add sugar. Boil for 4-5 minutes, pierce with an immersion blender.
We heat the resulting homogeneous mixture over a fire not higher than 80 ° C and dissolve gelatin in it. We set aside two spoons of currant coolies in a separate bowl - we will need them for the mousse. The remaining mass is laid out in a mold (d = 16 cm) lined with cling film and frozen.
Currant cake mousse
We bring 200 grams of cream to a boil, but do not boil and fill them with pieces of white chocolate. Leave this mixture alone for 3-4 minutes to warm up the chocolate. Then, mix the mixture together with two tablespoons of currant coolies.
While the melted chocolate and hot cream are cooling, beat the cream with the icing sugar and vanilla until soft peaks form. We introduce the cream into the cooling chocolate mass at the moment when they are almost the same temperature. When everything is mixed, immediately transfer half of the mousse to a silicone heart shape set on a cutting board.
We take out the frozen currant coolie from the freezer and place it in a mold, drowning it in mousse.
We cover the coolies with the rest of the mousse. Last we put the cake, which is only slightly sunk into the mousse. We remove the heart cake in the freezer for 5 hours. Only after complete freezing can it be removed from the mold.
Glossage (t = 35 °) is divided into two portions and tinted them in pink and yellow. We apply mirror glaze on the cake from two vessels with glaze at once. We leave the dessert covered with mirror glaze for a while alone. We are waiting for the remnants of the glass to drain.
As soon as you notice that the glaze is no longer dripping, carefully remove the remnants (drops) with a wet and hot spatula. Now you can transfer the heart-shaped mousse cake to the substrate, which I, in honor of Valentine's Day, the patron saint of all lovers, also decorated with small hearts.
Now, put the cake in the refrigerator for 2-3 hours until completely defrosted.
When serving, cut the cake with a dry but hot knife into pieces.
