  • 60 grams of frozen or fresh blackcurrant;
  • 20 grams of water + 1 s. a spoonful of lemon juice;
  • 60 grams of sugar;
  • 2 leaves of gelatin (10 grams).

  • 2 tbsp. spoons of currant coolie;
  • 320 grams of 33% cream;
  • 220 grams of white chocolate;
  • 50 grams of powdered sugar with vanilla;

  • food coloring: pink, yellow;

We heat the resulting homogeneous mixture over a fire not higher than 80 ° C and dissolve gelatin in it. We set aside two spoons of currant coolies in a separate bowl - we will need them for the mousse. The remaining mass is laid out in a mold (d = 16 cm) lined with cling film and frozen.
