To cook a very delicious German caramel cake Milk Girl (Milchmädchen) at home, divide it into several stages. I cook it step by step: cakes , mastic , ganache and creamy caramel cream on the first day, and on the second day I completely devote my attention to assembling and decorating. The cake is obtained with different tastes, which are completely in harmony and combined with each other. But in general - on the table is a real festive dessert that is suitable for any holiday. My proven step-by-step recipe with a photo will help you make such a treat for your family. As they say - the road will be mastered by the walking one! 🙂
We will need:
- 1 serving of caramel buttercream ;
- food coloring (I have lilac and green);
- 1 serving of cake layers "Milk Girl" ;
- 1 serving of dark chocolate ganache ;
- 1 portion of brown confectionery mastic ;
- 6 pieces of kiwi;
- 120 grams of canned peaches;
- 120 grams of canned pineapples;
- 25 grams of vodka.
How to make Milk Girl cake at home
To begin, prepare all the fruits by cutting them into pieces in separate dishes. Part of the cream needs to be set aside, it will go to decorate the cake.
Then, we take completely cooled cakes, coat them with caramel cream, put a layer of pineapples and kiwi on top. We put the second cake, coat it with cream and put pieces of peach and kiwi on it.
We continue to alternate the layers in this way and collect the cake until the cakes run out. The top layer of the cake does not need to be covered with cream.
Then, put a cutting board on the cake and put it in the refrigerator for 4 hours.
During this time, the cake will be well saturated, will keep its shape and you can continue to decorate it further. I cut it a little, giving it the shape of a trapezoid, as I will decorate the cake in the shape of a basket. If this is not for you, then you can skip this step.
We cover the cake with ganache in two stages and let it freeze in the cold.
We roll out the mastic, put it on the cake and completely cover the whole cake with it. Carefully cut off the rest of the mastic.
We make flagella from mastic and apply them to the side of the cake. First, two strips on top and bottom opposite each other, as if dividing the cake into two halves. Then we also apply strips on the right and left sides. Then, we continue to apply flagella, dividing the space into equal parts.
The place where the flagella are applied should be lubricated with vodka so that they stick well, and bend the tips a little to the top, as shown in the photo.
The remaining mastic is rolled out in the form of a tourniquet, cut into pieces and applied to the sides of the cake in a checkerboard pattern. This will make weaving like a basket. Do not forget to glue each flagellum with vodka.
Then, we twist two bundles together and glue them to the bottom and top of the basket. Leave the cake on the table to dry. The creamy caramel cream with mascarpone, which we put aside, is mixed with lilac and green food coloring. We apply lilac flowers through a pastry bag with an “open star” nozzle, and then, we apply green leaves.
A very beautiful and tasty cake can be decorated with an inscription that matches the theme of the celebration. It's my birthday. 🙂
