Two-color curd-jelly cake with no-bake biscuits

A delicious cake with cottage cheese cream can be prepared without baking. As a base, we will simply prepare a layer of cookies and butter, and the curd cream includes jelly and berries, which, if necessary, can be replaced with fruits. In the summer heat or if there is no way to use the oven, the recipe will help housewives quickly and easily make a delicious and healthy dessert.

Two-color curd-jelly cake with no-bake biscuits

Ingredients for the base: 200 g shortbread cookies, 100 g butter.

We put a sheet of parchment in a detachable form, tightly fixing the sides.

Melt the butter and pour the liver crushed into crumbs into it, mix thoroughly, we get the “dough”. We spread it on the bottom of the form, tightly tamping with our hands and put it in the refrigerator.

Ingredients for the filling: 400 g of cottage cheese, 400 g of sour cream, 150 g of sugar, 20 g of gelatin, 150 ml of water, 200 g of berries (blackcurrant, blueberries or cherries).

Pour gelatin with water, leave to swell for 10 minutes. Then, over low heat, heat until the gelatin is completely dissolved and set aside to cool.

Beat cottage cheese, sour cream and sugar until the grains are completely dissolved - we get a homogeneous mixture.

Grind the berries in a food processor and pass through a colander, sieve or gauze and get a pure puree without skins and seeds.

Add 2 spoons of sugar. The amount of sugar can be changed as desired. Put enough so that the berry puree is not sour for you.

Add a third of the curd cream to the resulting mass and beat.

Divide cooled gelatin in half. Pour one part into the puree of berries, after which, the mass will still need to be beaten for 2-3 minutes.

Then, pour the second part to the curd cream and, also, you need to beat for another 2 minutes. Do not forget to wash the whisk so as not to stain the mass.

We get the form. Pour in the jelly masses, forming a "zebra". This is easy to do: alternately pour 5 tablespoons of both masses into the center of the cake. After filling out the form, we form a cobweb with a toothpick: from the center to the edges we draw 4 lines lying across, and then, between them, we draw lines from the edge to the center.

We hide the form with dessert again in the refrigerator until completely solidified.

There are two ways to separate the jelly cake from the side of the mold without damaging the edges: scroll the mold over steam or with a hair dryer. When exposed to heat, the edges will slightly melt and fall behind. It remains just to remove the sides, drag the cake onto the dish by the parchment, and then carefully pull out the paper itself.
