The most delicious tiramisu with Italian meringue and chocolate chips

I borrowed the recipe for this Italian dessert from Pierre Herme, who explains each step in detail. And, if you follow his recommendations, then tiramisu turns out exactly as he describes. And I have seen this from my own experience. A detailed description with step-by-step photos taken will help you prepare this wonderful, most delicious, in my opinion, Italian dessert.

A distinctive feature of this recipe is that the cake is prepared without baking. It simply uses Savoyardi biscuit cookies. You can buy the necessary tiramisu biscuit cookies at any supermarket.

Ingredients:

  • 100 grams of sugar;
  • 200 grams of Savoyardi cookies;
  • 4 pieces of chicken eggs D-0;
  • 1 can of mascarpone cream cheese (250 g);
  • 250 ml cream 35%;
  • 20 grams of powdered gelatin + 60 ml of water;
  • 1.5 tbsp cocoa powder;
  • 1.5 teaspoons of instant coffee + 80 ml of water;
  • 50 grams of dark chocolate at least 59%.

For caramel:

  • 50 ml of drinking water;
  • 90 grams of white sugar.

Separate the squirrels from the yolks and start preparing the caramel.

Pour sugar into a saucepan, then pour in water and put on medium heat. We remove all spoons and our hands away from future caramel. Do not mix with a spoon (!). The only thing you can do is shake the stewpan a couple of times. When the caramel begins to thicken, dip a wooden spoon into the caramel and lift it up. The caramel should drip down in a thick, lazy ribbon. This is the consistency of caramel we need.

As soon as we have mixed sugar and water for caramel and put it on fire, we immediately begin to beat the whites until they double in size and become fluffy. Then, reduce the speed of the mixer and pour the hot caramel into the proteins. After that, continue to beat at high speed for about 4-5 more minutes. You should get a protein mass as in the photo.

A little tip: make sure that the caramel does not get on the whisk and on the sides of the dish.

Another important tip: do not remove the caramel residue with a spoon and do not try to add it to the egg whites from the spoon. Caramel will be taken in lumps and fixing something will no longer be realistic.

Next, grate the chocolate, and soak the gelatin.

Now, beat the yolks with sugar until a white smooth mass is obtained.

Add mascarpone cream cheese and beat.

In a separate bowl, whip the cream until fluffy.

With the help of a spatula, we introduce the cream into the yolk mass with mascarpone. Mix everything carefully.

Then, this mass is combined with Italian meringue and chocolate chips.

We heat the swollen gelatin in a water bath until dissolved. Pour it into the main cream in a thin stream and mix with a spatula.

How to make tiramisu cake from Savoiardi cookies

We take a form with removable sides. Cover the bottom with foil. Pour hot water over coffee and stir. We take savoiardi cookies, dip them on one side in coffee and put them on the bottom of the mold.

We cover the cookie layer with half of the entire portion of the cream.

Then, lay out the second layer of savoiardi, which is also dipped in coffee.

Cover with the remaining cream. Put in the refrigerator for 4-5 hours.

When the tiramisu is completely frozen, carefully remove the side of the mold and sprinkle the top of the tiramisu with cocoa powder. Better to do it through a sieve.
