Today I want to share my experience in decorating cakes and tell you how to prepare chocolate atlas for decoration. It can be prepared from dark or white chocolate and covered with kandurin of the shade you need. Thus, you can get a chocolate decor for a cake of different colors. Using my step-by-step recipe with photos, you can easily and easily make chocolate atlas to decorate your cake and desserts at home.

To make an atlas we need:

  • 20 grams of gelatin;
  • 20 grams of chocolate (I have dark);
  • 40 ml of drinking water (cold);
  • 1 teaspoon of confectionery glycerin;
  • 0.5 teaspoon without a hill of corn starch;
  • 0.5 teaspoon of kandurin (I have gold).

We start cooking by soaking the gelatin. Leave it alone until it completely swells.

We put the swollen gelatin in a water bath and dissolve it completely. Without removing the gelatin from the water bath, dip the pieces of chocolate into it.

First, the chocolate should warm up and soften, and then it can be mixed and combined with gelatin, add glycerin.

Pour all the hot chocolate mass onto a silicone mat and stretch it with a spatula. As soon as the whole mass was stretched over the rug, we immediately remove the spatula to the side. I held my spatula for a second in the upper right corner, and it immediately stuck, slightly spoiling the corner of the future atlas. So don't repeat my mistake.

Leave the chocolate atlas to harden on the table for five minutes, and then transfer the mat to the refrigerator for another 5 minutes. Only after the atlas has completely solidified, carefully separate it from the rug.

Dust the rug with starch and lay the chocolate decor on it. Using a brush, apply kandurin.

Then, with dry hands, we begin to wipe the surface of the satin, giving it a uniform sheen over the entire surface.

Next, you can remove the finished chocolate atlas for storage. Wrap it tightly in several layers of foil and keep in the refrigerator.

Since I need gold stripes for decoration, I cut the satin into strips of the desired width.

When finished, chocolate satin looks like a dense fabric. It is easy to make the necessary figures, flowers and other decorations for the cake from it.

Store the finished chocolate atlas wrapped in foil in the refrigerator. I have never kept it for more than 2 weeks. If it has acquired excessive density at the time of storage, then you just need to sprinkle the atlas with water from the starch side and let it lie for 1.5-2 minutes.
