Today I will tell you how to make cakes with condensed milk for a Milk Girl cake according to a German recipe. In the ingredients, I indicated double the amount of products from the original recipe. If you take the products as in the original, then you can only bake small cakes d = 15 cm. As a result, the cake itself will turn out to be small, no more than 10 cm high. It is better to use cakes of this size for the second or third tier when making a large multi-tiered cake . I bake biscuit cakes with condensed milk for a simple, but large, full-fledged cake d = 24 cm. We will need:
- 340 grams of premium wheat flour;
- 1 teaspoon of vanillin;
- 1/3 teaspoon of soda;
- ¼ tsp citric acid;
- 760 grams (2 cans) whole condensed milk 8.5%;
- 4 eggs of caliber D-0 or D-B;
- ½ tsp fine salt;
- 40 grams of butter 72%.
How to cook cakes with condensed milk for a Dairy Girl cake
At the very beginning of work, turn on the oven and heat it up to 190 ° C.
Now, we begin to beat the eggs together with salt at high speed until foam appears.
Add the condensed milk and beat the whole mass at high speed for another one and a half minutes.
Sift flour with vanilla, soda and citric acid. Then, in portions, pour this mixture into the bowl with the dough and beat at medium speed. At the very end, add warm melted butter and mix everything well.
Draw a circle on the parchment (d=24 cm), turn it over so that the drawing is on the reverse side of the parchment, and coat the outlined area with oil. I recommend preparing two parchment blanks for baking cakes at once.
We spread 2.5-3 tbsp. tablespoons of dough in the center and distribute it over the entire surface slightly beyond the circle line.
Bake the cake for about 5-6 minutes. Then, take out and cool on a wire rack. Immediately remove the parchment from the cake and clean it with a smooth spatula. Use the same parchment again, just don't forget to oil it before applying the dough.
From the prepared dough, 6 cakes were obtained. We stack them in a pile and cut off the dense edges of the cakes. Just make sure the cakes are completely cool!
If you are not going to use them right away to assemble the cake, transfer each cake with cling film so that they do not stick together, then fold on top of each other.
Wrap the stack of cakes tightly in cling film and freeze.
