New Year's mousse cake with waffle balls in chocolate

Ingredients:
For the biscuit:
- 3 large chicken eggs D-0;
- 180 grams of sugar + ½ teaspoon of vanillin;
- 150 grams of wheat flour + ½ teaspoon of baking powder;
- 50 grams of butter 72.5%.
For chocolate mousse:
- 300 ml milk 3.6%;
- 60 grams of sugar;
- 200 grams of white chocolate;
- 15 grams of powdered gelatin + 60 ml of water;
- 400 ml cream 33%;
- green food coloring.
For the waffle layer:
- 100 grams of dark chocolate 62% + 50 ml of milk;
- 200 grams of ground almonds;
- 150 grams of wafer balls;
- dark chocolate for decoration;
- instant coffee and powdered sugar for decoration.

How to make a biscuit
Beat cold eggs with sugar and vanilla until it is completely dissolved. Add the sifted flour along with the baking powder and beat. At the very end, add very soft butter, beat. Lubricate the silicone mold (d = 24 cm) with oil and spread the biscuit dough. Bake in a preheated oven at 180°C for about 30 minutes. We check the readiness of the biscuit on a dry stick. Take out and cool the cake.
Cut the completely cooled cakes into two halves.
Pour ground almond (or other) nuts into a bowl with wafer balls, which are sold in the store.
We put a confectionery ring on the first biscuit. If you get a dry biscuit, be sure to soak it in syrup. I did not have to do this, as my biscuit turned out to be very fluffy and not dry.
Pour hot milk over chopped chocolate, wait until it melts. It can be put in the microwave for 6-7 seconds to warm up and mix. This should be repeated until the chocolate and milk have a uniform melted texture. Pour wafer balls with nuts with chocolate, mix and spread the mass on the first part of the biscuit cake in an even layer. Let the chocolate harden.
In the meantime, we will prepare the mousse. Soak gelatin and set aside to swell. Bring milk to a boil with sugar. Then, remove it from the heat and dip the chocolate into hot milk, let it melt there. Stir the melted chocolate into the milk until smooth.
Then, we introduce the swollen gelatin and dissolve it there and cool the whole mixture to a cool state. While the chocolate mass is cooling, whip the cream to soft peaks and gently fold it into the milk-chocolate mass. Add food coloring and stir.
All components are ready, it remains only to assemble our New Year's cake. We will collect the cake upside down. We fill the cutting board with cling film, set the confectionery ring at d = 26-27 cm. Put the mousse on the bottom of the mold, and then put the biscuit with frozen wafer balls so that the balls are in the middle of the cake, and the biscuit is out. Put the cake in the fridge to chill for 3 hours.
Then, we take out the cake and remove the ring. It remains only to decorate the cake for the New Year. On top of the mousse we put New Year's cookie cutters (I have them in the form of Christmas trees) and pour grated chocolate inside the molds.
From above, through a fine sieve, sprinkle the cake with instant coffee, and then with powdered sugar.
You can arrange the remaining half of the biscuit by making another portion of the mousse cream in the same way or come up with something else at your discretion.
