Coffee Tiramisu - homemade cake without raw eggs from mascarpone and savoiardi
A wonderful Italian dessert that I prepare with eggs, mascarpone, cream and Savoyardi biscuits, allows you to enjoy the great taste of coffee tiramisu even for those who are afraid of eating dishes using raw eggs. An important feature of the recipe is that it can be made without baking, and the eggs are heat treated. Make coffee Tiramisu at home and enjoy this wonderful classic Italian dessert. We will need:
- 175 grams of fine white sugar;
- 1 pack (or 350 grams) Savoyardi ready-made cookies;
- 4 large chicken eggs (category D-0);
- 1 can of mascarpone cheese (or 350 grams);
- 500 ml cream 32% -35%;
- 15 grams of sheet or powder gelatin + 60 ml of water;
- 1 - 1.5 tbsp. spoons of cocoa powder;
- 2.5 teaspoons of instant coffee + 80 ml of water;
- 1 st. a spoonful of ground coffee;
- 120 grams of white chocolate.
Caramel for meringue:
- 100 ml of drinking water;
- 200 grams of white granulated sugar.
How to make coffee tiramisu at home
Cream meringue with mascarpone
Starting to cook, pour sugar into the ladle, and only then pour water into the very center. We wait until the sugar is completely covered with water. Now, put it on a fire a little more than medium. Caramel should not be boiled over low heat. It should boil and the temperature will rise. The readiness of caramel can be checked with a cooking thermometer. My caramel is ready at 119-122 degrees.
Place the egg whites in the tall bowl of the mixer. When the temperature of the caramel reaches 80 ° C, start whipping the egg whites at a high mixer speed. We begin to mix hot caramel into lush proteins, but we do not get on the whisk. Then we continue beating for about 3-4 minutes, but already at a higher speed. The meringue is ready.
Now we are preparing the main buttercream with mascarpone. Soak gelatin and set aside. We put the yolks in a saucepan along with sugar and brew until creamy in a water bath. Dissolve gelatin in this mass.
Now you have to work very fast. Whip the cream and mix it with mascarpone (room temperature). Then, we introduce the cooled meringue, mix with a whisk and add the gelatinous mass with yolks. Mix and add grated white chocolate.
How to properly assemble a cake
We place a pastry frame on the work surface. Inside lay out the frame with acetate tape.
Pour instant coffee into a bowl and pour hot water over it, dissolve. Dip one cookie into the coffee and place on the bottom of the prepared pan.
Spread half of the cream on the cookies and distribute evenly. Sprinkle with brewed coffee.
Then, apply the second half of the cream. We knock the form on the table lightly, this will allow the cream to be distributed evenly and fill the voids. We put in the cold for a couple of hours.
How to decorate Tiramisu
Now that the dessert has frozen, sprinkle it with cocoa through a small colander.
Then, you can decorate with drawings in the form of hearts from powdered sugar and instant coffee. To apply them evenly and correctly, you can use stencils.
